Not only do Shun knives have an incredibly sharp edge out of the box, but they hold that edge exceptionally well. Shun classic knives are made with a core of VG-10 "super-steel" (containing carbon, chromium, cobalt, magnesium, molybdenum, silicon and vanadium) then clad with 32 layers of high-carbon stainless steel for durability and protection. This cladding is partially honed away, revealing a Damascus-like pattern on the blade. This pattern reduces drag when cutting and allows the blade to slide easily through foods.
The handle is made of PakkaWood that has been infused with a resin to make them durable while still retaining the beauty of wood. The handle itself has an asymmetrical, D-shape to fit snugly in your hand without twisting.
